Chinese New Year Stir-Fried Vegetables with Tofu and Sesame

Celebrate Chinese New Year with this light and flavourful dish! Packed with protein from the tofu, antioxidants from seasonal vegetables, and fibre from the added broccoli and wholewheat noodles, it’s a nutrient-rich, satisfying meal. Approx. 400 calories per portion, 20g protein, 12g fat, 55g carbs.



Ingredients:

  • 1 tbsp sesame oil

  • 2 garlic cloves, minced

  • 1 small piece of ginger, grated (1 tsp)

  • 1 carrot, julienned

  • 1 red pepper, sliced

  • 150g pak choi, chopped

  • 150g broccoli florets

  • 200g firm tofu, cubed

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp sesame seeds (optional)

  • 150g brown or wholewheat noodles (cooked according to package instructions)


Method:

  1. Cook the brown or wholewheat noodles according to the package instructions. Drain and set aside.

  2. Heat the sesame oil in a wok or large pan over medium-high heat. Add the garlic and ginger, cooking for 1 minute.

  3. Add the carrot, red pepper, pak choi, and broccoli, stir-frying for 5-6 minutes until the vegetables are tender but still crisp.

  4. Stir in the tofu, soy sauce, and rice vinegar, cooking for a further 2-3 minutes.

  5. Add the cooked noodles to the pan, tossing everything together for 1-2 minutes until heated through.

  6. Sprinkle with sesame seeds before serving.
