This light dish is rich in lean protein and omega-3 fatty acids from the cod, which support heart health. Kale provides a powerhouse of nutrients, including vitamin K, vitamin C, and antioxidants. Approx. 300 calories per portion, 30g protein, 12g fat, 10g carbs.
Ingredients:
2 cod fillets (around 150g each)
1 lemon, sliced into thin rounds
2 tbsp olive oil
200g kale, tough stems removed
1 garlic clove, minced
Salt and pepper, to taste
Method:
Preheat the oven to 200°C (fan 180°C). Line a baking tray with parchment paper.
Place the cod fillets on the tray and season with salt and pepper. Lay lemon slices over the fillets and drizzle with 1 tbsp olive oil.
Bake for 15-20 minutes until the fish flakes easily.
Meanwhile, heat the remaining 1 tbsp olive oil in a pan and sauté the garlic for 1 minute. Add the kale and cook for 3-4 minutes until wilted.
Serve the cod with the garlic kale on the side.
